Tempeh Hash

Ingredients:
12 ounces tempeh, cut into
1/2-inch cubes
4 medium potatoes, peeled and diced
1 onion, diced
2 tablespoons low-sodium soy sauce
1/2 teaspoon garlic powder salt and ground black pepper, to taste
Directions:
- Place the potatoes in a large pot, add water until the potatoes are just covered.
Bring to a boil over medium-high heat and cook for 10 – 15 minutes, or until tender. - Coat a large skillet in cooking spray and place over medium heat. Add the
onions, potatoes, tempeh, and soy sauce and sauté. Stir frequently, ensuring you
cook all sides of the tempeh cubes. Remove from heat and add the garlic powder,
salt, and pepper.
