Quinoa Power Muffins

1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 packets of stevia or another natural sweetener
2 teaspoons cinnamon
1/2 teaspoon salt
3/4 cup wheat bran
1/4 cup oat bran
3 tablespoons ground flax seed
1 1/3 cups almond milk
1/3 cup canola oil
1 teaspoon vanilla extract
1 cup quinoa, cooked
1/2 cup walnuts, chopped
1/2 cup vegan chocolate chips
1/2 cup hemp seeds

  1. Preheat oven to 400°F. Coat a 12-cup muffin pan in cooking spray.
  2. In a big mixing bowl, upload the flour, baking powder, baking soda, stevia,
    Cinnamon, and salt. Whisk collectively, then pour in the wheat bran, oat bran, and
    flaxseed and whisk until thoroughly combined.
  3. In a separate bowl, add the almond milk, canola oil, and vanilla extract. Whisk
    Together, then pour within the quinoa and whisk to mix. Pour the dry ingredients
    In and blend together with a wooden or plastic spoon. Fold inside the walnuts,
    Chocolate chips, and hemp seeds. Be careful not to overmix, there must nonetheless be
    some chunks.
  4. Pour the batter into the muffin pan, only filling each cup to three/4 full. Place in
    Oven and bake for 20 – 22 minutes, or until a toothpick inserted into the center
    comes out clean.
