2-inch cut beef short ribs Coffee Beef Rub
2 tbsp. Instant coffee
1 tbsp. ground ancho chile 1 tbsp
½ tsp. cumin ground chile de Arbol
1 tsp. black pepper
1 tsp. kosher salt
2 tbsp. olive oil
6 cloves garlic, crushed
¼ cup honey

  1. Set up the grill for indirect heat at 300°F. Use hickory,
    pecan, or any fruitwood.
  2. Apply the Coffee Beef Rub all over the ribs. Smoke the beef short ribs for
    1½ hour.
  3. Place the ribs in a foil pan and pour in the Wrapping Glaze ingredients.
    Cover with heavy-duty aluminum foil and cook for 2 hours or until tender.
  4. Brush the glaze on all the ribs and serve immediately.
