Black Bean Breakfast Burrito

1 (10 inch) whole grain tortilla
2 egg whites
1/4 cup black beans, drained and rinsed
2 tablespoons salsa
2 tablespoons low-fat cheddar cheese, shredded
1 tablespoon fat-free sour cream

  1. Coat a small nonstick skillet in cooking spray, add the eggs
    and scramble. After 1 – 2 minutes add the beans and cook until eggs are done
    and beans are heated. Remove egg mixture from pan and stir in salsa and cheese.
  2. Place the tortilla in the hot pan and cook until warm, about 1 minute on each side.
    Remove tortilla from pan and top with egg mixture and sour cream.
