Cooking Time: 5 Minutes
1 (10 inch) whole grain tortilla
2 egg whites
1/4 cup black beans, drained and rinsed
2 tablespoons salsa
2 tablespoons low-fat cheddar cheese, shredded
1 tablespoon fat-free sour cream
- Coat a small nonstick skillet in cooking spray, add the eggs
and scramble. After 1 – 2 minutes add the beans and cook until eggs are done
and beans are heated. Remove egg mixture from pan and stir in salsa and cheese.
- Place the tortilla in the hot pan and cook until warm, about 1 minute on each side.
Remove tortilla from pan and top with egg mixture and sour cream.
