What’s inside:

1 tbsp vegetable oil
1 onion, finely diced
2 cloves garlic, minced
1 (15 oz.) can black beans, rinsed and drained
1 green bell pepper, chopped
2 tomatoes, chopped
1/2 (10 oz.) package frozen corn
12 (12 inch) flour tortillas
1 C. shredded Cheddar cheese
1/4 C. vegetable oil
How to make:

  1. In a large skillet, heat the oil on medium heat and sauté the onion and
    garlic till tender.
  2. Add the beans, bell pepper, tomatoes and corn and cook till heated
  3. Spread the bean and vegetable mixture over 6 tortillas evenly.
  4. Sprinkle with the Cheddar cheese evenly and top with the remaining
    tortillas to form quesadillas.
  5. In a large skillet, heat 1/4 C. of the oil on medium-high heat and cook
    the quesadillas till golden browned from both sides, turning once.
